Basic Sponge
Ingredients:
175g S.R. Flour
175g Caster Sugar
175g Soft Margarine
2 eggs (beaten)
1 tsp baking powder
1 tsp vanilla essence
Method:
- Turn the oven on to 180°C Gas Mark 5.
- Grease and line 2 sandwich tins.
- Measure all the ingredients into a mixing bowl.
- Beat using an electric mixer for 1 – 2 mins.
- Divide between the sandwich tins.
- Bake for 20 – 24 mins.
Allow to cool on a cooling rack. |

Ingredients:
1 large tub whipping cream
1 tbsp caster sugar
½ tsp vanilla essence
1 small tin mandarins (drained)
150g cooking chocolate
2 tbsp jam
Method:
- Whip the cream, then stir in the sugar and vanilla essence.
- Assemble the cake using the jam and a little cream in the middle.
- Spread the cream over the top and sides.
- Decorate with mandarins and chocolate.
